Bring to a boil and allow to boil 1 minute or until syrup becomes a candy ball when dropped into a cup of cool water.&lt;br /&gt;&lt;br /&gt;While the first 4 ingredients are coming to a boil, mix the oatmeal and peanutbutter in a mixing bowl and set aside.&lt;br /&gt;&lt;br /&gt;Once syrup is done, pour over oatmeal and peanut better mixture. My husband loves them even more. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;1 cup softened butter&lt;br /&gt;1 cup granulated sugar&lt;br /&gt;1 cup light brown sugar&lt;br /&gt;2 large eggs&lt;br /&gt;1 tsp pure vanilla extract&lt;br /&gt;½ tsp salt&lt;br /&gt;1 tsp baking soda&lt;br /&gt;1 tsp baking  powder&lt;br /&gt;2 cups whole wheat pastry flour&lt;br /&gt;3 cups rolled oats&lt;br /&gt;1 cup Holiday M&amp;Ms&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;&lt;br /&gt;Preheat oven to 375⁰ F.&lt;br /&gt;&lt;br /&gt;Cream together butter and both sugars. Blend in eggs and vanilla. In a separate bowl, stir together flour, oatmeal, salt, baking soda, and baking powder. Mix gradually into dough until well-blended. Stir in M&amp;Ms. Drop by heaping tablespoonfuls onto an ungreased cookie sheet (I find a darker non-stick cookie sheet works best). Bake for 7-8 minutes at 375⁰ F, until golden, but still moist and ever-so-slightly gooey. Remove from oven, let stand for about a minute, then remove immediately to cool. Butter &lt;br /&gt;Shredded Mozzarella cheese of your choice &lt;br /&gt;Soy sauce&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;Remove tails from shrimp.&lt;br /&gt;Cook rice as directed on package; set aside.&lt;br /&gt;Chop onion and pepper, sauteing together and set aside.&lt;br /&gt;&lt;br /&gt;Melt garlic &amp; butter in a frying pan and fry the shrimp until hot.&lt;br /&gt;Mix rice with Soy sauce of your preference. Add in onion and pepper.&lt;br /&gt;&lt;br /&gt;Preheat oven to 375 degrees&lt;br /&gt;&lt;br /&gt;Using a deep oven-safe dish, put a layer of rice in, then a layer of shrimp, then a layer of shredded cheese. Repeat until there is no more rice and shrimp, top it all with another layer of shredded cheese.&lt;br /&gt;&lt;br /&gt;Put in oven until cheese is melted and golden. Whisk in the pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in the whipped topping. Cut cake into 1/2in. cubes. &lt;br /&gt;&lt;br /&gt;Spoon a third of the pudding mixture into a 4-qt glass bowl. Top with half of the cake cubes and sliced strawberries. Repeat layers once. Top with remaining pudding mixture. Thanks for the hugs and love.&lt;br /&gt;&lt;br /&gt;Orange Jello Salad&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;2 (3 ounce) packages orange flavored gelatin&lt;br /&gt;2 cups boiling water&lt;br /&gt;1 pint orange sherbet&lt;br /&gt;1 (10 ounce) can mandarin oranges, drained&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Directions&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Whisk the gelatin into the boiling water until dissolved. Allow to cool for 10 minutes, then stir in the orange sherbet until completely melted. Once the gelatin begins to thicken, stir in the drained mandarin oranges. Add the eggs, one at a time, mixing well after each egg has been added. Blend in the chocolate. Stir in the flour. Stir in the nuts. Reserve 1/4 cup of nuts. Pour mixture into greased jelly roll pan (or cookie sheet with higher sides). Bake at 350 degrees for 20 min. Let cool about 10-15 minutes. To make the frosting, melt the butter and chocolate over low heat and then remove from heat. Stir in confectioners sugar. Alternate the confectioners sugar with the milk. Stir in the vanilla. Peel onions and slice them into half or quarter circles. Sooo, I decided to share it here. Hope you enjoy it. It's great with cornbread. &lt;br /&gt;&lt;br /&gt;Taco Soup&lt;br /&gt;&lt;br /&gt;2 cans ranch style beans&lt;br /&gt;2 cans pinto beans&lt;br /&gt;1 can whole corn&lt;br /&gt;1 can black olives&lt;br /&gt;1 can rotel tomatoes and green chili&lt;br /&gt;1 pound hamburger (cooked)&lt;br /&gt;1 Onion (cooked with hamburger) &lt;br /&gt;1 package taco mix&lt;br /&gt;1 package ranch style dressing mix&lt;br /&gt;&lt;br /&gt;Don't drain any of the cans. After cooking meat and onions, toss everything into a big pot and let simmer. Eat when hot. Flour&lt;br /&gt;3/4 c. milk&lt;br /&gt;1/4 t. salt &lt;br /&gt;black pepper&lt;br /&gt;red pepper &lt;br /&gt;paprika&lt;br /&gt;&lt;br /&gt;Place a strip of cheese in each chili and place in a greased 8X12 pan. Beat eggs, gradually add flour and mix with a whisk. Beat until smooth and add milk, salt and pepper. Sprinkle grated cheese over chilies and then paprika. Meanwhile, prepare seasoning mix with hamburger meat, tomato paste, tomato sauce and 1 1/4 cup water. Preheat oven to 350. in a 2 1/2 quart casserole layer 1/2 macaroni, 1/2 cottage cheese and 1/2 the meat sauce; repeat. Top with cheddar cheese. Lipton Onion Soup Mix&lt;br /&gt;1 can frozen orange juice concentrate (undiluted)&lt;br /&gt;&lt;br /&gt;Salt and pepper chicken. Place in shallow baking dish. Sprinkle soup mix over chicken and add orange juice. &lt;br /&gt;&lt;br /&gt;Bake at 350 degrees for 45 minutes to an hour. It was so easy and tasted wonderful! I changed it a little but for other great recipes, check out her pages. And look at her books, Lena is a very talented author and a wonderful friend.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Beef and Rice Casserole&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;8 cups cooked rice&lt;br /&gt;1 pound ground beef&lt;br /&gt;1 envelope taco seasoning&lt;br /&gt;½ cup water&lt;br /&gt;3 cups chunky salsa (I use medium. You can use whatever strength you like.)&lt;br /&gt;Grated pepperjack cheese (you can use any type cheese you like best) &lt;br /&gt;&lt;br /&gt;Brown ground beef. Stir in taco seasoning and water. Let simmer for 5 minutes.&lt;br /&gt;&lt;br /&gt;In a large bowl combine rice, meat mixture, and salsa. Stir well.&lt;br /&gt;&lt;br /&gt;Divide into two casserole dishes. Top with grated cheese. Microwave for ten minutes.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;You can freeze one of these or share with a neighbor or shut in. You can also take one to a potluck and keep the second for dinner later in the week. With the one I plan to freeze, I leave the cheese off. When the mixture has been well beaten for about 10 minutes, butter the cake pans, pour half the batter in each pan and bake at 350 for 15 minutes. Serve it with cornbread and you have a wonderful meal. &lt;/strong&gt;&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;1 lb. meat, ground or cubed&lt;br /&gt;16 oz mixed veggies&lt;br /&gt;16 oz green chili&lt;br /&gt;16 oz. tomato sauce&lt;br /&gt;7-10 potatoes&lt;br /&gt;&lt;br /&gt;Cook meat and boil the potatoes. I had no idea how to cook them but liked the idea of having them in the garden.&lt;br /&gt;&lt;br /&gt;Tonight I developed a eggplant recipe and it is delicious. My sweet hubby liked it and so did my friend, Shari.&lt;br /&gt;&lt;br /&gt;Here it is.&lt;br /&gt;&lt;br /&gt;2 med. eggplants&lt;br /&gt;1 can rotel tomatoes and green chile&lt;br /&gt;1/2 a large onion&lt;br /&gt;8 slices of Velveeta cheese&lt;br /&gt;garlic powder, salt and pepper (to taste)&lt;br /&gt;cooking spray&lt;br /&gt;&lt;br /&gt;Slice eggplants into 1-2 inch slices. Put eggplant and onion into a pan of boiling water, let boil 5-8 minutes until the eggplant is soft. Then layer eggplant, tomato's and cheese in a pre-sprayed casserole dish. Stir together. I've posted the links to the side in my favorites list.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Vegetables to roast: &lt;br /&gt;red-skinned potatoes, unpeeled&lt;br /&gt;rutabagas, peeled, cut into 1-inch pieces&lt;br /&gt;carrots, unpeeled &lt;br /&gt;parsnips, peeled&lt;br /&gt;onions, peeled&lt;br /&gt;leeks (white and pale green parts only)&lt;br /&gt;turnips, peeled&lt;br /&gt;sweet potatoes or yams, unpeeled&lt;br /&gt;beets (blanch &amp; peel before roasting)&lt;br /&gt;squash, asparagus and fennel (I know, these aren't root veggies, but good)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cut all of the vegetables into large chunks. Place them in a large bowl(s) and drizzle a little olive oil over them along with a sprinkling of salt and pepper. You can also mix in your favorite herbs, such as rosemary and garlic. Toss them with your hands to coat them all. Place on a baking sheet sprayed with non-stick spray. Roast in a 400 degree oven for about 1 hour until brown and caramalized, stirring and turning the vegetables mid-way. But, they are also good reheated and served with any main dish such as pork or fish. &lt;br /&gt;Heat some in the microwave and then mash them with a bit of butter and milk. Serve as you would mashed potatoes with meat loaf, chicken, etc. &lt;br /&gt;Make a quick au-gratin by slicing, layering them with bread crumbs, cheese and a small amount of cream or milk. Top with bread crumbs mixed with a little melted butter. Bake in a 350 degree oven for 30 minutes. &lt;br /&gt;Add roasted vegetables to hot chicken or vegetable stock for a very quick soup. I use an emersion blender for a creamy soup. Add a dollop of sour cream and some chives on top. &lt;br /&gt;Toss cold, sliced roasted vegetables with a vinegar and oil salad dressing (Italian dressing) and place on a bed of lettuce for a winter salad. We had a friend in his 50's that had never had fresh cooked beets. He said he didn't like beets (he was used to those in a can!)  Now he loves them and we make sure to plant a few extra to give to him. Defrost the veggies and add.  Add the cheese and&lt;br /&gt; seasonings.  Put into a 2 quart casserole dish, which has been sprayed with&lt;br /&gt; Pam (or equivalent). Place one piece of chicken on each piece of aluminum foil. In a food processor or blender process together, lemon rind, minced garlic, onion power, soy sauce, lemon juice, olive oil and paprika.&lt;br /&gt;Spread processed mixture over chicken, sprinkle with salt and pepper and wrap shut with aluminum foil. Bake for about 50 minutes until chicken cooked through and no longer pink in the center. When pan is hot pour about 1/4 cup batter per pancake on the griddle. &lt;br /&gt;Turn when top is covered with bubbles and brown other side. &lt;br /&gt;Serve with syrup and butter.&lt;br /&gt;&lt;br /&gt;The oatmeal gives these pancakes a nice texture and really filles you up. This is yummmy. &lt;br /&gt;&lt;br /&gt;Cucumber and Onion Salad&lt;br /&gt;&lt;br /&gt;1 Cucumbers&lt;br /&gt;1 Onions&lt;br /&gt;1 Red Bell Peppers&lt;br /&gt;1 of each Squash (raw yellow and green)&lt;br /&gt;Salt (to taste)&lt;br /&gt;Lemon Pepper (to taste)&lt;br /&gt;1/4 cup Olive Oil&lt;br /&gt;1/3 Cup unsweetened rice wine vinegar&lt;br /&gt;one or two packages of Splenda&lt;br /&gt;&lt;br /&gt;Chopped cucumbers, onions, red peppers, squash (yellow or green)&lt;br /&gt;sprinkle with salt and a lot of lemon pepper&lt;br /&gt;then mix about 1/4 cup olive oil and 1/3 cup of unsweetened rice wine vinegar with a packet or two of Splenda and pour over veggies. Let it marinate for a few&lt;br /&gt;hours and it's yummy.&lt;br /&gt;&lt;br /&gt;To spice this up you can add one jalapeno.
